Paso Robles has been called "California's oldest watering place" since 1795: the Salinan people already frequented its hot springs and hot-mud deposits well before Spanish explorers arrived, as recorded in their accounts. River Oaks Hot Springs Spa carries that long history forward, on a site that has hosted thermal facilities for generations.

The resort in its current form took shape in 2005-2006, when Estrella Associates purchased Paso Robles Hot Springs and carried out a full renovation, relocating the soaking tubs from their original spot along the Salinas River to the present site for open views, in a contemporary style. River Oaks remains today one of only three commercial hot-springs facilities still operating in Paso Robles.
